We don’t work with ultra-processed or low-quality products. On an island shaped by tourism, that choice isn’t always the easiest, but it’s ours.
Essential ingredients on our menu come from close to home. Bread, for example, comes from Laroti, just ten minutes from Santanyí. Proper sourdough. bold crust, structured crumb, balanced acidity.
If you’re looking for frozen nuggets, pre-cooked paella or seafood flown in from 10,000 kilometres away, we’re probably not your place.
The Drinks
Wine runs through La Nouvelle. It’s not an accessory, it’s part of our foundation.Our cellar is one of the most carefully curated on the island: a sharp mix of local producers and international bottles, including a few you won’t find anywhere else.
Alongside them, natural wine classics we love to open after the beach: vibrant, generous, built for long tables and loud laughs.
Cocktails follow the same philosophy. This year’s cocktail menu is created with Malik Acid, the London-based studio shaping some of today’s most forward-thinking drinks.
The Vibe
In a place overwhelmed by fast tourism and louder crowds, we chose to slow things down.
La Nouvelle is a meeting point for people who care about food, about wine, about how a morning feels or about the music during the dinner.
Locals, creatives, travellers who know where to look. Music that moves with the evening. Lunch that turns into drinks. Afternoons that drift into long nights.
The vibe isn’t programmed. It happens naturally when the right people gather around a table.
