The Food

Seasonal and fresh but not ever-changing, our menu is a urban and contemporary vision on mediterranean and bistrot classics.

We do not use ultra-processed, preprocessed or low-quality food. It is difficult to work like this on an island that lives off tourism, but if you are looking for frozen nuggets, pre-cooked paella or cheap fish and seafood caught 10,000 kilometres away from Santanyí, we are not that kind of place.

Laroti, our bakery just ten minutes from Santanyí, makes the kind of sourdough we believe in: bold crust, structured crumb, balanced acidity. Bread with character.


The Wine

Wine runs through La Nouvelle.No lectures, no theatrics. Just honest bottles, real growers, and wines that bring people together.

Our cellar is one of the most carefully curated on the island. A sharp mix of local producers and international bottles, including a few you won’t find anywhere else. Alongside them, the natural wine classics we love to open after the beach.


The Cocktails

This year’s menu is created with Malik Acid — London-based and among the most forward-thinking drink studios today.

No neon nonsense. Just cocktails that shift the mood of a morning, stretch an afternoon, or set the tone for the night.


The Vibe

In a place overwhelmed by fast tourism and louder crowds, we chose to slow things down.
La Nouvelle is a meeting point for people who care about food, about wine, about how a morning feels or about the music during the dinner.

The vibe isn’t programmed. It happens naturally when the right people gather around a table.

La Nouvelle Famille is run by Marta Expósito and Manuel Paz, entrepreneurs with more than 10 years of experience in research and creative direction who have worked on international design and business projects in fashion, food&beverage, hospitality and lifestyle. This project, which could be summed up as giving people food and drink, is a universe that transcends the hospitality industry to reflect a contemporary culture of understanding life, its a consultancy firm with its feet on the ground and its eyes on Europe and a platform for testing and launching new products.
